Chicken and Black Bean Mexican Lasagna

The recipe I am about to share with you is one of my favorites.  Of course it is Mexican and healthy, but the best part is how easy it is to make. Keep in mind that most of the recipes I share are for 2 people. 

Chicken and Black Bean Mexican Lasagna

Ingredients:
  • 4 corn tortillas 
  • Small 8 oz can of tomato sauce
  • Salsa
  • 1 can of black beans
  • Plain Greek yogurt
  • Fresh cilantro
  • 2 chicken breasts (cubed)
  • Cheese
  • Chili powder
  • Red pepper
  • Salt
  • Cumin 

    Directions:
    • Preheat oven to 375 degrees
    • In a skillet, add 1 cup of salsa and the cubed chicken.  Cook until chicken is done. Season to taste.
    • In a medium bowl, add chicken, cilantro, black beans and mix them together
    • In a small-medium baking dish spoon half of the tomato sauce onto the bottom, sprinkle with chili powder and other preferred seasonings. 
    • Line the bottom with corn tortillas; overlapping is okay.
    • Spoon chicken mixture on top of tortillas.  Spread evenly. (Sometimes I add salsa on top of this layer for more flavor and veggies)
    • Then spoon and spread plain Greek yogurt atop the chicken. 
    • Next sprinkle cheese on top of the Greek yogurt.  Repeat those steps once more, except don't place cheese on top until the last 5-10 minutes of baking. 
    • Bake for 30-40 minutes. Cool for 5-10, serve, and enjoy!
    Discussion:

    The worst part of this entire meal is the cheese, you can use low fat/fat free or eliminate it completely.  If you do use a lower fat content I would keep an eye out to avoid burning it.  Sometimes fat free cheese turn into a plastic-y crunchy mess.  You may want to consider lowering the temperature and not adding the cheese to the top until the end of baking time (5-10 minutes).

    Greek yogurt (better tasting/healthier than sour cream). Be careful not to overdo it on the Greek yogurt.  Try doing 1 dollop at each corner and spreading in towards the center.  Go easy or it will be soupy.

    Have fun with this recipe and post your versions, I'm always up to try new ways.  Add your own twists like refried beans or tortilla strips... you really can't go wrong.
