Ingredients:
- 2 cups shredded cheese
- 4 flour tortillas
- 1 small can of tomato sauce
- Enchilada seasoning packet
- Water
- Fresh cilantro
- Olive oil
- 1/2 cup minced/diced onion
- 1-2 cloves of garlics
- 1 tbsp. cumin
- Salt and pepper (I prefer red pepper)
- Sour cream (optional)
- 1 package ground lean turkey
Directions:
-Preheat oven to 350 degrees F (175 degrees C).-Lightly grease a 8x8 inch baking dish.-Place a small amount of olive oil into a skillet; medium heat and cook onion and garlic until tender, then add turkey meat and rest of seasonings to taste. Brown meat.
-Prepare enchilada sauce by following the directions on the packet and simmer
-Spoon half of the sauce onto bottom of 8x8
-Take the tortillas, dip in enchilada sauce, fill with meat and cheese *MAKE SURE YOU FOLD YOUR TORTILLA PROPERLY*
-Place folded filled tortilla in baking dish seam side down. Repeat previous steps for all tortillas.
-With the remaining half of sauce, pour over the top of your filled tortillas in the 8x8.
-Bake for 20-25 minutes
-Take out of oven and sprinkle cheese all over the top. Put back in the oven until the cheese is completely melted
-After cheese is melted, let the dish cool for 5-10 minutes. Garnish and Enjoy!
